Kofta Curry

Serves: 4-5
For Kofta Balls:
Maharaja Spice Box ingredients
- 3/4 tsp cumin seeds
- 3/4 tsp coriander powder
- 1 tsp garam masala
- 1/2 tsp chilli powder
Other ingredients
- 500g beef mince
- 1 onion finely chopped
- 1/3 cup finely chopped coriander
- 1/3 cup finely chopped mint
- 1 tsp ginger powder (or paste)
- 1 tsp garlic powder (or paste)
- Salt to taste
- 1 egg beaten
- 2 tbsp chickpea flour
Maharaja Spice Box ingredients
- 1 tsp cumin seeds
- 2-3 cardamom pods
- 3-4 cloves
- 1 Ceylon Cinnamon stick
- 1/2 tsp Garam Masala
- 1 tsp cumin - ground
- 1 tsp coriander powder
- 1/2 tsp turmeric
Other ingredients
- 1/4 cup vegetable oil
- 3 tomatoes chopped or half can tinned
- 1/2 tsp paprika
- 1/3 cup coconut milk
- Fresh coriander
- Fresh chilli
- 1 1/2 cup water
- 4 cloves garlic minced
- 1 inch fresh ginger minced
Method:
To make koftas
- Combine all the ingredients for the koftas together in a medium bowl & using your hands mix well.
- Roll into 24 small balls and set aside.
To make curry
- Heat oil in a pan and add in whole spices, let them simmer for about a minute.
- Add in onion and cook for about 5 mins till they begin to soften.
- Add in ginger & garlic and cook for another 5 mins then add all other spices.
- Stir for a few mins, add a little water if it starts to stick.
- Pop in tomatoes & water, bring to the boil.
- Add coconut milk & stir through.
- Place koftas gently into the sauce and cover and allow to cook for 35 mins.
- Once kofta is cooked through, add coriander & serve with rice or roti.
