Smokey Samba BBQ Lamb Chops with Asparagus

Featuring our Smokey Samba Sensation, these BBQ lamb chops are a bold, flavorful dish that pairs perfectly with the natural sweetness of grilled asparagus.

 

Ingredients

  • 8 lamb loin or rib chops (1-inch thick) or between the bones off a rack.
  • 2 tablespoons of Smoky Samba Sensation from The One & Only Spice Stack.
  • 2 bunches of asparagus cleaned and bottom half peeled.

Method

  1. Remove the lamb chops from the refrigerator and massage the Smoky Samba Sensation onto the meat. Set the lamb chops aside at room temperature for 5 minutes. 
  2. Heat a flat BBQ plate or heavy based skillet. Place the lamb chops in when the pan is smoking with a little bit of olive oil.
  3. Medium rare lamb chops will take 3-4 minutes on each side, make sure you stand then on the fat side for a few minutes to render the fat. Once cooked, take off the grill and rest. 
  4. While resting the lamp chops, place the asparagus onto the grill and dust with Smoky Samba Sensation and cook for 2 minutes on each size, depending on the thickness of the asparagus. It should still be bright green and firm.
  5. Serve the lamb chops on a bed of the asparagus. Accompany with your favourite sauces for dipping!
