Smokey Samba BBQ Lamb Chops with Asparagus

Featuring our Smokey Samba Sensation, these BBQ lamb chops are a bold, flavorful dish that pairs perfectly with the natural sweetness of grilled asparagus.
Ingredients
- 8 lamb loin or rib chops (1-inch thick) or between the bones off a rack.
- 2 tablespoons of Smoky Samba Sensation from The One & Only Spice Stack.
- 2 bunches of asparagus cleaned and bottom half peeled.
Method
- Remove the lamb chops from the refrigerator and massage the Smoky Samba Sensation onto the meat. Set the lamb chops aside at room temperature for 5 minutes.
- Heat a flat BBQ plate or heavy based skillet. Place the lamb chops in when the pan is smoking with a little bit of olive oil.
- Medium rare lamb chops will take 3-4 minutes on each side, make sure you stand then on the fat side for a few minutes to render the fat. Once cooked, take off the grill and rest.
- While resting the lamp chops, place the asparagus onto the grill and dust with Smoky Samba Sensation and cook for 2 minutes on each size, depending on the thickness of the asparagus. It should still be bright green and firm.
- Serve the lamb chops on a bed of the asparagus. Accompany with your favourite sauces for dipping!
