BBQ Chicken Skewers

Ingredients
- 2 heaped tbsp Lord & Lion Butter Chicken Masala Blend
- 4 chicken thighs cut into thin strips
- 1/2 cup of natural yoghurt
- 2 tablespoons @riovisaolives olive oil
- 10 baby cucumbers
- 5 red radishes
- 1 cup coriander leaves
- 1 cup mint leaves
- Juice of 1 lemon
- Extra virgin olive oil
- 1/2 a teaspoon @olssonssalt salt flakes
- Extra yoghurt for serving
Method
- Mix together the yoghurt, Masala Blend and lemon oil.
- Coat the chicken in the spiced yoghurt mixture and marinate for 2 to 3 hours before threading onto skewers.
- Cook chicken skewers on either side on the BBQ or in the oven, turning skewers regularly until cooked.
- Smash the cucumbers and radishes with the back of a knife and place into a serving bowl.
- Top with fresh herbs, lemon juice and salt flakes.
- Serve the Lord & Lion Butter Chicken skewers with salad, flatbread and a little extra yoghurt on the side.
