Smoked Cod Curry

Ingredients
From the Lankan Spice Box
- 8-10 curry leaves
- ½ tsp turmeric
- 2 tsp chilli powder
- ½ tsp cinnamon
- 1 tsp unroasted curry powder
- 5 cloves
Other Ingredients
- 2 large red onions, chopped
- ½ kg smoked cod, chopped into 2-3 cm chunks
- 1½ tsp garlic paste
- 1 tsp ginger paste
- 2 tbsp olive oil
- 400ml light coconut milk
- Salt to taste
Method
- In a pan, sauté the onions in the olive oil. Add the curry leaves garlic, ginger and cod, stir fry on medium heat for 3 minutes.
- Add the remaining ingredients from the Lankan Spice Box, the coconut milk and simmer for 4 more minutes. Add salt to taste.
- Serve on a bed of steamed rice or with some roti.
