Smoked Cod Curry

Ingredients

From the Lankan Spice Box

  • 8-10 curry leaves
  • ½ tsp turmeric
  • 2 tsp chilli powder
  • ½ tsp cinnamon
  • 1 tsp unroasted curry powder
  • 5 cloves 

Other Ingredients

  • 2 large red onions, chopped
  • ½ kg smoked cod, chopped into 2-3 cm chunks
  • 1½ tsp garlic paste
  • 1 tsp ginger paste
  • 2 tbsp olive oil
  • 400ml light coconut milk
  • Salt to taste

 Method

  1. In a pan, sauté the onions in the olive oil. Add the curry leaves garlic, ginger and cod, stir fry on medium heat for 3 minutes.
  2. Add the remaining ingredients from the Lankan Spice Box, the coconut milk and simmer for 4 more minutes. Add salt to taste.
  3. Serve on a bed of steamed rice or with some roti.
