Sri Lankan Peanut Brittle
Every country has its own version of peanut brittle and this right here is the version all Lankan kids grew up with! So common a sweet, there isn’t a house or a corner shop in the country which doesn’t have this treat in stock.
Whip up a batch of this deliciousness for afternoon tea! Store and keep in an airtight container to add as a little gift for friends and family, or to take to those picnics!
Ingredients
- 1 tbsp olive oil
- 2 cups of unsalted roasted peanuts
- 130g palm sugar (or jaggery)
- 120g caster sugar
- 70g butter
Method
- Combine the sugar in a non-stick frying pan over a low flame until the mixture turns a beautiful honey brown colour.
- Add the butter and mix through fast to ensure not to burn the mixture.
- Fold in the chopped roasted peanuts until peanuts are covered in mixture.
- Pour combined mixture into a greased and lined baking tray and set aside for 20-30 minutes until cooled and hardened.
- Snap off and enjoy!
