Warm Spiced Chickpea Salad

The blackened onions, zesty olive oil and pistachios keep it delicious and interesting!

Ingredients

Maharaja Spice Box Ingredients:

  • 2 tsp of fennel seeds
  • 2 tsp of coriander
  • 2 tsp of cumin seeds
  • 2 tsp of cardamom pods

Other Ingredients: 

  • 4 cups of warm cooked chickpeas
  • 4 brown onions
  • 1 cup young pistachio kernels
  • 4 tbsp @riovistaolives lemon oil
  • Juice of 2 lemons
  • Sea salt flakes to taste

Method

  1. Cook onions over coals or in the oven until blackened on the outside and soft in the middle.
  2. Grind whole spices to a course powder discarding the cardamom husks.
  3. In a bowl, place the warm chickpeas, peeled chard onions, the spices, pistachio nuts, lemon oil and lemon juice.
  4. Season will see salt flakes and toss gently.
  5. Serve immediately & enjoy!
