Warm Spiced Chickpea Salad

The blackened onions, zesty olive oil and pistachios keep it delicious and interesting!

Ingredients
Maharaja Spice Box Ingredients:
- 2 tsp of fennel seeds
- 2 tsp of coriander
- 2 tsp of cumin seeds
- 2 tsp of cardamom pods
Other Ingredients:
- 4 cups of warm cooked chickpeas
- 4 brown onions
- 1 cup young pistachio kernels
- 4 tbsp @riovistaolives lemon oil
- Juice of 2 lemons
- Sea salt flakes to taste
Method
- Cook onions over coals or in the oven until blackened on the outside and soft in the middle.
- Grind whole spices to a course powder discarding the cardamom husks.
- In a bowl, place the warm chickpeas, peeled chard onions, the spices, pistachio nuts, lemon oil and lemon juice.
- Season will see salt flakes and toss gently.
- Serve immediately & enjoy!
