Ingredients

Dumplings (mushroom, spinach and ginger)

For the wrappers

  • 2 cups all-purpose flour, plus more for rolling
  • 1/4 teaspoon salt
  • 3/4 cup boiling water

For the filling

  • 1 tablespoon sesame Oil
  • 500gms mushrooms finely chopped
  • 1 inch ginger peeled and finely chopped
  • 3 garlic cloves peeled and finely sliced
  • 1 bunch spinach washed and roughly chopped
  • 1 headed tablespoon of Lord & Lion Momo Dumpling Hot Sauce

Method

Wrappers

  1. In a medium bowl, whisk the flour and salt. Pour boiling water into over dry ingredients, constantly stirring.
  2. Once cooled to a comfortable temperature, use your hands to knead the mixture into a dough. If too dry, add a little more hot water.
  3. Once well combined, knead for a couple minutes.
  4. The dough should be elastic in texture
  5. Wrap the dough in plastic wrap or bag. Let sit for 20 minutes at room temperature. Roll out small pieces of dough into a flat circular shape. The dough should be about 1 to 2mm thick.
  6. Continue to roll out wrappers, flouring liberally so the wrappers don’t stick to each other.

Filling

  1. Over medium heat, add the sesame oil, ginger, garlic and mushrooms. Continue cooking until mushrooms have wilted and dried out (approximately 12-15 minutes).
  2. Add in the spinach and continue cooking till wilted along with a tablespoon of the dumpling sauce. Allow to cool before making dumplings.
  3. Once you have filled dumplings, steamfor approximately 3-4 minutes before serving with Momo Dumpling Sauce.
