Simple Summer Vegetables

All of your favourite vegetables will work well in this recipe but we love the combination of textures and the full flavour hit we get from these three simple summer vegetables and our delicious Sweet Chilli Lemongrass Sauce!

Cook time: 50-60 mins

Serves: 4-6

 

Ingredients

 

Method

  1. Roast the pumpkin with some extra virgin olive oil and sea salt flakes in the oven for 50 minutes at 200C or until tender.
  2. Pan fry brussel sprouts for 2-3 mins in extra virgin olive oil and add a few salt flakes
  3. Add a splash of water and then add the mushrooms to the pan.
  4. Add 4 tbsp Sweet Chilli Lemongrass Sauce to the vegetable mixture and toss through.
  5. Open up the pumpkin lengthways and add the vegetable mixture.
  6. Salt to taste and drizzle some more Sweet Chilli Lemongrass Sauce on top.
