Sriracha Barbeque Chicken

Serves: 3-4

 

Ingredients

  • 3 medium-size chicken thighs, skinless and boneless
  • 2 tbsp Lord & Lion Sriracha Sauce
  • 2 tbsp fish sauce (optional)
  • 200 g of French beans, tails removed
  • 2 medium-size cucumbers, cut into small chunks
  • 1/4 tsp sea salt flakes
  • 1 cup of cherry tomatoes cut in half
  • Juice of two limes
  • 1 bunch of fresh coriander, leaves only 
  • One bunch of fresh mint, leaves only 

 

Method

  1. Marinate chicken thighs in 1 tbsp of Lord & Lion Sriracha Sauce, and 1 tbsp of the fish sauce (optional) for an hour.
  2. Heat a chargrill or medium-sized skillet until hot.
  3. Place chicken over chargrill and cook on either side for 5 to 6 minutes or until cooked through.
  4. Meanwhile in the mortar and pestle, crush the green beans with the Lord & Lion Sriracha Sauce, fresh lime juice and remaining fish sauce.
  5. Add in the tomatoes along with the sliced chicken thighs once cooked.
  6. Mix together the green beans, cucumbers, chicken and sauce with the fresh herbs.
  7. Toss gently and serve immediately.
