Sriracha Barbeque Chicken

Ingredients
- 3 medium-size chicken thighs, skinless and boneless
- 2 tbsp Lord & Lion Sriracha Sauce
- 2 tbsp fish sauce (optional)
- 200 g of French beans, tails removed
- 2 medium-size cucumbers, cut into small chunks
- 1/4 tsp sea salt flakes
- 1 cup of cherry tomatoes cut in half
- Juice of two limes
- 1 bunch of fresh coriander, leaves only
- One bunch of fresh mint, leaves only
Method
- Marinate chicken thighs in 1 tbsp of Lord & Lion Sriracha Sauce, and 1 tbsp of the fish sauce (optional) for an hour.
- Heat a chargrill or medium-sized skillet until hot.
- Place chicken over chargrill and cook on either side for 5 to 6 minutes or until cooked through.
- Meanwhile in the mortar and pestle, crush the green beans with the Lord & Lion Sriracha Sauce, fresh lime juice and remaining fish sauce.
- Add in the tomatoes along with the sliced chicken thighs once cooked.
- Mix together the green beans, cucumbers, chicken and sauce with the fresh herbs.
- Toss gently and serve immediately.
